Recipe 1: the Coffee Mousse Cake
Never thought about this one, right? The Coffee Mousse Cake is perfect to impress your dinner guest or for yourself, in the long, hot, summer nights. Just one recommendation: keep the recipe at hand, everyone will want it!
Ingredients:
- 2 cups fresh cream
- ¾ cup mascarpone cheese
- 13-14 digestive biscuits
- 1 cup of icing sugar
- ½ cup butter
- ¾ cup chopped hazelnuts
- 3 single shot espressos (we would like to recommend Caffè Aiello Classic Blend for this recipe!)
- 2 tbsp cocoa powder
- 1 tbsp granulated sugar
Method:
- Turn the biscuits into crumbles and mix them with the sugar and the cocoa
- Add in the butter and keep mixing everything together
- Take a greased round cake mould and pour the mixture in it. You’ll have to press the mixture down with a spoon in order to create the base for your cake. Once you’re done, put it in the fridge to rest for about 20 minutes
- In a new bowl, pour in the mascarpone cheese with the espresso shots and whisk it together
- In a separate bowl, whip the cream. Little by little add in the icing sugar
- Add the mascarpone cheese cream in the whipped cream bowl and combine the two of them
- Take the cake mould out of the fridge and pour the cream over the base
- Once the cream is evenly spread you can sprinkle it with the chopped hazelnuts. Before serving, you’ll need to put the cake in the fridge for around 5 hours.
Enjoy your delicious fresh dessert!
Recipe 2: No Eggs and Mascarpone cheese Coffee Mousse
This is a much lighter and quicker to make version of the mousse. You can have it by itself or use it as a filler for cakes or pastries.
Ingredients:
- 2 cups fresh cream
- ½ cup condensed milk
- 2 single shot espressos (you can also use leftover coffee if you have some!)
Method:
- Whip the cream in a bowl
- In a separate bowl, combine together the espressos and the condensed milk. Pour the whipped cream in it and mix
- Keep stirring the mixture and be aware of the direction of your movements: it has to be bottom-up otherwise your cream will lose its texture and turn into liquid!
- Once it’s done, cover it with aluminium and put it in the fridge where it will have to stay for at least 4 hours. Before serving, check the texture, if it’s not solid enough, let it stya in the fridge for a little longer!
Enjoy!
Recipe 3: a Light Coffee Mousse with no Cream
Our recipe n2 was light, but not as lither as recipe n3. This one you can have it while on a diet, no guilt feelings involved! It’s also very easy and quick to prepare: you’ll enjoy it for sure!
Ingredients:
- 1 1/3 cup of plain yogurt
- 2 ice cubes
- 1 espresso shot cold (may we suggest Caffè Aiello 100% Arabica for this specific recipe?)
- A sweetener of your choice (honey, stevia or maple syrup work perfectly!)
Method:
- Blend all the ingredients together until the mixture has reached a creamy texture
- Tada, it’s ready!
We told you it was an easy one! Better if you serve it right away, so it won’t lose its perfect texture.
