In Italy we love our plumcake, which is very similar to a pound cake. It’s perfect for breakfast or for a mid-day break…and even as a dessert! Read on to learn our 3 favourite recipes.
In Italy breakfast is always sweet. No sausages or egg, we prefer a slice of cake (have you tried our coffee Bundt cake or homemade cookies?) paired – of course – with a delicious espresso or cappuccino.
Plumcake is one of the cakes we love the most in the morning, and that’s why we want to share with you 3 of our most favourite recipes: the yogurt plumcake, the marbled plumcake, and – you guessed – the coffee plumcake!
A plumcake has the same shape of a pound cake, therefore if you have a pound cake mould at home, you have everything you need for the following recipes!
The Yogurt Plumcake
This plumcake is not only delicious, it’s also so easy to prepare! It’s the perfect recipe to try with your kids on a rainy afternoon.
Ingredients:
- 2 cups flour
- 1 cup yogurt (we suggest a plain one)
- 1 cup of granulated sugar
- ½ cup vegetable oil
- 2 tbsp milk
- 2 tbsp butter
- 1 ½ tbsp yeast
- 3 eggs
- 1 lemon grated peel
- 1 tsp vanilla extract
- A pinch of salt
Method:
- Whisk eggs and sugar together (possibly with the electrical tool) for about 5 minutes. In the meantime heat the oven at 340F
- Put the butter in the mixture together with the milk, the yogurt, the vanilla extract and lemon peel. Mix everything together
- Little by little add the flour, the yeast and the salt. Mix everything together, then add the oil while you keep stirring
- Pour everything in a plumcake mould and in the oven for more or less 1 hour. If you want to make sure the plumcake is well done, just stick a toothpick in it: it it comes out dry the plumcake is ready, if wet keep cooking it for a little while.

The Marbled Plumcake
Who doesn’t like a vanilla/chocolate plumcake? And this is one is also so nice to see! The recipe is quite simple and the result so delicious.
Ingredients:
- 2 cups flour
- 1 cup of granulated sugar
- ¾ cup butter
- 3 tbsp milk
- 5 tbsp cocoa powder (the unsweetened kind)
- 1 ½ tbsp yeast or baking powder
- 3 eggs
- 1 tsp vanilla extract
- 1 pinch of salt
Method:
- Start by whisking the butter and the sugar together until when you reach a creamy texture. Heat your oven at 350F in the meantime.
- Pour in the eggs, whisk. Then add the yeast, the flour, the vanilla extract and the salt. Keep mixing.
- In another bowl mix together in the milk and the cocoa powder together with ½ of the flour mixture you made
- In the plumcake mould pour the two mixtures each one from one side. The two mixtures will mix in the middle by themselves.
- Put it in the oven for 35 minutes. Do not forget about the toothpick test!
Et voila!
The Coffee Plumcake
Finally, our favourite! Nothing better than a soft plumcake with espresso aroma. And if you don’t want to exceed with caffeine, you can always bake it with decaf coffee!
Ingredients:
- 2 cups flour
- 1 1/4 cup of granulated sugar
- ½ cup of butter
- 3 tbsp milk
- 1 tbsp potato starch
- 3 single shot espresso (we suggest our 100% Arabica variety, or decaf if you don’t want caffeine)
- 3 eggs
- 1 ½ tbsp yeast or baking powder
Method:
- First of all, melt the butter. In the meantime pre-heat the oven at 350F
- In a separate bowl, whisk together the eggs ant the sugar. You can do it by hand or using a blender
- Add the flour and potato starch little by little while you keep stirring
- Add in the melted butter, the baking powder the espressos and the milk.
- Pout the mixture in the plumcake mould and place it in the oven for 50 minutes. Again: toothpick test!
