Here’s the recipe for the very traditional Yule Log. As you might expect, we like it better with some coffee in it…
Nothing says “Christmas” as the yule log cake! If you want to honour this delicious tradition but you want to add an original touch, this is the perfect recipe! Read on to learn more about our Coffee Yule log recipe. We are going to give quantities for about 8 people.
The ingredients
Sponge ingredients:
- 1 ¼ cups of all purpose flour
- 1 ¼ cups of sugar
- 8 eggs
- Vanilla flavour
- A pinch of salt
Cream filling ingredients:
- ½ cup corn flour
- 4 egg yolks
- ½ cups granulated sugar
- ¾ cups milk
- a splash of brandy
- 3 ½ oz dark chocolate
- 1 espresso shot (for this recipe we suggest our 100% Arabica variety)
Frosting ingredients:
- 1 cup whipping cream
- 3 ½ oz dark chocolate
- 1tsp powdered coffee
Toppings:
- Cocoa powder
- Powdered coffee
- Christmas decorations
Preparation
Sponge preparation:
- Separate the yolks form the egg whites
- Start by whisking the egg yolks together with the sugar, vanilla flavour and a pinch of salt
- Sift the flour in in it together with the egg whites and whisk everything together unitl you reach a stiff texture
- Place some parchment paper on a baking tray and pour the misture on it – it should be around 1/3 inch thick. Bake at 392 F for 10 minutes
- After that, leave it cool off and when it’s cold roll it up. Put it in the fridge for aroud 1 hour
Cream filling preparation:
- Whisk the eggs and the sugar together until you get a smooth texture
- Pour in the brandy, the espresso shot and the cocoa and mix it all together
- Take the sponge from the fridge and unroll it – be careful, this is a very delicate moment! Spread the coffee cream on it making sure it’s evenly distributed.
- Roll the sponge back up. Wrap it in plastic film and place it in the fridge for 3 hours at least
Frosting preparation:
- After having removed the roll from the fridge and from its plastic wrap, cut out the two ends of the roll – around ½ inch each end.
- Melt the chocolate and the butter together (be careful not to burn them!). Leave the mixture to cool for a while and then add in the whipping cream
- Spread the mixture on the roll making sure to cover every inch of it! If you feel like doin it, draw with a fork some lines on the roll to make it look like a real log!
- Put it in the fridge for at least 3 hours before serving it
Toppings:
To make your Coffee Yule Log really amazing dust a mixture of powdered coffee and cocoa powder on it and after that get creative with your Christmas decorations! You might want to look for red and gold decorations to make it really Christmassy!
