Craving for a coffee cake but you don’t have the basic ingredients for a cake, like eggs or milk? Don’t worry, you can still do it! Here’s a recipe for an amazing vegan coffee cake.
Some people are quite sceptical when it comes to vegan cakes. They couldn’t be more wrong! The result of this recipe is amazing and it’s also a very easy one, perfect if you are not an experienced baker.
Whether you are a vegan coffee lover, you are lactose intolerant, or you are just curious to try a new way of baking, read on, and you’ll find the perfect cake. We recommend having it in the morning, but it’s also a great option as a snack or dessert.
Not only it is an easy recipe but it’s also very quick to prepare! Making it perfect if you need to make a delicious cake but you have little or no time.

Without further ado, let’s bake!
Ingredients:
- 5 espresso shots or 3 small americanos
- 1 cup of sugar
- 1 ½ cup of all-purpose flour
- 2 fl oz of sunflower oil
- ½ oz of baking powder
- Icing sugar
Ingredients for the icing:
- 1 espresso shot
- 120 icing sugar
Preparation method:
- By using your favourite method, make the coffee you need for the recipe, dissolve the sugar in it and let it cool
- Put the coffee and the sunflower oil in a bowl and stir
- In another bowl, combine the flower (preferably sifted) and the baking powder
- Add the flour, little by little, to the coffee and oil mixture, and stir to blend
- Once you have blended everything together, it’s your call whether it might need some more coffee or flour based on its consistency
- By using the sunflower oil, grease the pan and pour some flour to make it non-sticky. Add the batter into it
- Bake at 360F for 40-50 minutes, after having preheated the oven. When the time has elapsed, try to stick a toothpick in it: if it’s wet when you take it out you should leave the cake in the oven for another while, otherwise, you can take it out
Let it cool and when it’s ready dust it with some icing sugar.
If you’d like to ice the cake, here’s how you can do it:
- In a bowl, mix the icing sugar and the cooled coffee, by adding it little by little
- When the mixture looks smooth, have it to rest for a couple of minutes
- When the cake has cooled down, spread the icing on it with a spoon (or a spatula if you have it), and make sure it’s evenly distributed on all parts of the cake.
