In this article we are going to reveal our top recipe for a delicious coffee bundt cake, which is very popular in Italy.
The recipe is easy to make and won’t take long! You can pair a slice of the cake with your morning latte or cappuccino (obviously with Caffè Aiello!) or even with your tea! This breakfast will give you just the perfect amount of energy you’ll need to go on with your busy day.
The recipe
First of all we want to give you our little secret: this recipe is coffee based, but If you are looking forward to cut on your caffeine intake there are a few ways you can modify it. Modifications are good also if you are planning to bake this recipe for your kids – who are not old enough to include coffee in their diet. Instead of coffee, in fact, you can easily use barley coffee substitute or decaffeinated ground coffee too!
What you’ll need:
- 2 cups of all purpose flour
- 1 cup of brown sugar
- ½ cup of coffee (the best for this recipe is our 100% Arabica ground coffee)
- 2 ½ oz of regular butter (at room temperature)
- 3 eggs
- 1 tsp baking powder
- 1 sachet of cake raising powder
Method:
- Prepare your coffee and once it’s ready leave it to cool down.
- Whisk the sugar and the eggs together until you get a foam-like texture
- Put in the butter and keep mixing
- Add the flower, the baking soda and raising powder little by little, and stir until smooth
- Pour in the coffee and blend everything together
- Grease with a little bit of butter your mould and pour in the mixture
- Put it in the oven, preheated at 370F and cook for 40 minutes
- Let it to cool down before serving…and enjoy!
Recipe twists
We already mentioned how you can make this recipe without caffeine, but here you have a few more twists to play with. Here we go:
Chocolate twist
If you are the chocolate kind of person, pour in some chocolate chips with the ingredients. Chocolate and coffee…do you know anything more perfect than this?
Ganache twist
The bound cake has no creamy parts. So if you like you can prepare a ganache (maybe with dark chocolate, butter and cream?) and spread it on the cake.
Whipped Cream twist
If you are a whipped cream lover, you can add it on the bundt cake a little bit: they go perfectly together, and kids will love it!
Keep your Bundt cake for a few days
The Coffee Bundt cake will preserve perfectly for a couple of days at room temperature, better is stored in a sealed box to prevent it from drying out. You cal also put it in the freezer if you want to keep it for a few more days, although this might compromise its softness once thawed.
